Vegetable Biriyani

Ingredients
- Basmathi rice-2 cups
- Carrot-1
- Beans-10
- 1/4 Cauliflower
- Onion-3
- Peas-1 handful (fresh or frozen)
- Tomotes-3
- Ginger-1 piece
- Garlic-4
- Cardamom -2
- Cinnamon-1
- Cloves-3
- Bay-leaves-1
- Mint-1 small bunch
- Coconut-1/2 fresh or shredded
- Green Chilli-2
- Ghee-125 gm
- Yoghurt-1/2 cup
- Salt 1 table Spoon
- Few pieces of Cashew and Raisins
Method
- Dice all the vegetables
- Soak shredded coconut in one cup of warm water
- Once it gets cold, squeeze out the coconut milk and discard the shreds.
- Grind the ginger and garlic
- Heat the Ghee in the frying pan
- Add Onion fry well
- Add the Cardamom, Cinnamon, Cloves and Bay-leaves
- Add the ground Ginger and Garlic
- Add Green Chilli, Tomatoes, Mint
- Then add Yoghurt and Salt
- Wash the Basmathi Rice and add this to the frying pan
- Cook all the Ingredients covered with a lid or
- Transfer it into a rice cooker and cook it.
- Once Rice is Cooked
- Add cocount milk , mix it well
- Fry the cashews and Raisins in Ghee and add this to the cooked rice
- Mix well, keep lid closed and leave it for 5 minutes
- Serves well with a side dish of yoghurt salad
